Many market gardeners are set up in direct sales in the area to offer seasonal fruits and vegetables. Essonne is the leading producer of watercress in France (30% of national production) and has the last artisanal producer of peppermint in Milly-la-Forêt. Saffron from Gâtinais (the most expensive spice in the world), oils, flours, artisanal pasta, vegetable terrines are also part of the local fabrications.
